Matcha Peanut Butter Cups

Like milk and cookies or bacon and eggs, there are certain foods that make for legendary pairings. They go together so well, that you can hardly imagine them apart. One of our favorite legendary pairings is the classic duo of peanut butter and chocolate. So of course, we had to put our own special matcha twist on this beloved combination. And, with a little help from recipe creator, Amanda Boyd, we have a new trio on the block: Matcha, White Chocolate, and Peanut Butter Cups. The richness of the white chocolate compliments the subtly sweet and slightly earthy taste of matcha perfectly, while the peanut butter adds the perfect savory & salty flavor. They’re are the ideal homemade treat to satisfy your sweet tooth and sneak a little extra matcha magic into your life. And, they’re incredibly easy to make. 

Ingredients:

(Makes 6 peanut butter cups)

½ tbsp. Tenzo matcha

1 cup white chocolate chips

½ cup peanut butter

½ cup oat flour

1 tsp vanilla 

2 tbsp maple syrup

 

Directions:

Step 1:

Line a cupcake tin with 6 cupcake liners.

Step 2:

Create the peanut butter mixture: Combine ½ cup oat flour, ½ cup peanut butter, 1 tsp vanilla and 2 tbsp maple syrup, and mix until a dough has formed. 

Step 3:

Once the peanut butter dough has formed, roll into small balls. Place each ball onto a cutting board or plate, and press down on each one until a small flat circle has formed. This should be big enough to fit into a cupcake liner, about 3/4 inch. 

Step 4:

Create the chocolate mixture: Melt 1 cup of white chocolate chips in the microwave in 30 second intervals, stirring each time. Once completely melted, add in ½ tbsp. Tenzo matcha and stir until no matcha clumps remain. 

Step 5:

Pour in 1 heaping spoonful of the matcha chocolate into the cupcake liners.

Step 6:

Place the prepared peanut butter circles over the melted chocolate

Step 7:

Pour another heaping spoonful over the peanut butter layer.

Step 8:

Freeze for about 30 minutes, or until hardened. For best results, keep in freezer until ready to eat!
