If you're a fan of matcha and looking for a delicious, dairy-free way to enjoy it beyond your morning latte, you're in for a treat! This dairy-free matcha ice cream is made with coconut milk and requires only five ingredients—no ice cream maker needed. It’s the perfect way to cool down while reaping the benefits of matcha green tea.
Ingredients:
- 2 cans full-fat coconut milk, refrigerated overnight
- 2/3 cup (7 oz) sweetened condensed coconut milk
- 4 tsp Tenzo matcha powder + 5 tbsp hot water (adjust to taste)
- 2 tsp vanilla extract
- A pinch of salt
Directions:
- Prep the Coconut Milk: Refrigerate the coconut milk cans overnight. When ready to make the ice cream, scoop the thick cream from the top of the cans into a large mixing bowl, discarding or reserving the remaining coconut water for another use.
- Make the Matcha Mixture: In a small bowl, whisk together the Tenzo matcha powder and hot water until fully dissolved. Set aside.
- Mix Everything Together: Add the matcha mixture, sweetened condensed coconut milk, vanilla extract, and a pinch of salt to the bowl with the coconut cream. Use a hand mixer on medium speed to mix everything for about 5 minutes, or until the mixture thickens.
- Freeze: Pour the ice cream mixture into a container or loaf pan, cover, and place it in the freezer for at least 4 hours, or until firm.
- Serve and Enjoy: Before serving, let the ice cream sit at room temperature for 10-15 minutes to soften slightly. Scoop, serve, and enjoy your luscious matcha treat!
