Not Without Wine here! You GUYS, we are a week away from Christmas and you know what that means? Office holiday bake-off.

You know...when everyone brings those boring cookies to celebrate the holidays? Yeah, it is finally that week...and you know what? You are NOT bringing boring cookies this year, because you are bringing these super simple Matcha Almond Cookies.

These cookies have amazing flavor and a wonderful chew. They will impress all of your coworkers, your boss...heck, even your Mom. They are also the perfect accompaniment to our Matcha Hot Chocolate.

Now, get after it!

Matcha Almond Cookies

INGREDIENTS:

(Makes 16-20 Cookies)

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1/8 tsp ground cardamom
  • 3/4 cup sugar
  • 2/3 cup coconut oil, liquid
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 tsp Tenzo Tea matcha powder
  • Powdered sugar, to dust on top

Step 1:

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl, whisk together the flour, baking powder, salt and cardamom.

Step 2:

  1. In a separate bowl, mix together the granulated sugar, oil, eggs, and vanilla and almond extracts.

Step 3:

  1. In a small bowl, stir 2 tablespoons of water with the matcha. Add to wet ingredients.

Step 4:

  1. Add wet ingredients to the dry ingredients and mix together.

Step 5:

  1. Line your baking sheet with parchment paper.
  2. Make 1 oz balls (small ice cream scooper does the trick!), place roughly 2 inches apart.
  3. Refrigerate for 30 minutes.
  4. Bake for 10 minutes, checking for the edges and bottom to get golden brown. Let cool for 10 minues.
  5. Arrange your cookies and dust with powdered sugar (add to a strainer and tap for an even spread of sugar)
