Upside Down Vegan, Maple Matcha Latte With Coconut Milk
We don't want to make any bold claims, but this Upside Down Vegan Matcha Latte might just turn your world upside down. A completely ethical and easy-to-make beverage with numerous health benefits, that also tastes delicious, what more could you ask for? If you're new to aquafaba (garbanzo bean liquid), this latte might just make a convert out of you. It produces a light, fresh non-dairy whip that gives you all the luxuriousness of whipped cream without the heavy calories and dairy-packed peaks. Look for a low-sodium option for a sweeter final product (shout out to one of our subscribers for this helpful tip), but any garbanzo beans will do the trick. Now it's time to pop into your kitchen and have your world turned upside down.
Ingredients:
1 can aquafaba liquid (water from a garbanzo bean can - use no/low sodium if possible)
1 tablespoon coconut sugar
1 tablespoon maple syrup
1 teaspoon of Tenzo Matcha
2 oz of water
8 ounces Coconut Milk (or milk of your choice)
Ice

Step 1:
Whisk 1 teaspoon of Matcha with 2 ounces water to make a shot of matcha.
Step 2
Pour 1 tablespoon maple syrup in the bottom of the glass (adjust the amount based on your sweetness preference).
Step 3
Add ice to the glass on top of the maple, then add coconut milk, and finally pour your matcha shot slowly into the glass.
Step 4
Whip aquafaba on medium setting for 3 mins (until it starts getting bubbly) *using a KitchenAid mixer. (You can use any handheld mixer - times will vary). Next, add coconut sugar (or sugar of your choice) + whip on high speed for 4 more minutes or until the mixture gets fluffy with stiff peaks.
Step 5
Top your latte with the whip. Dust the top of the whip with matcha powder if you prefer.
