If you’re a fan of the classic mint chocolate chip ice cream, then you’re going to love these Matcha Mint Chocolate Chip Energy Bites! Inspired by that beloved flavor, these little bites of goodness are not only delicious but also packed with nutrients and a healthy dose of energy-boosting matcha. Perfect for an afternoon snack or a quick pick-me-up, these energy bites are sure to become your new favorite treat.


Ingredients:

  • 1 cup almond flour
  • ¼ cup vanilla protein powder 
  • 1 tbsp Tenzo Matcha Powder
  • ½ tsp blue spirulina powde
  • ¼ tsp salt
  • ½ cup cashew butter
  • ¼ cup maple syrup (or agave)
  • 1 tsp vanilla extract
  • ¼ tsp peppermint extract
  • ¼ cup dark chocolate chips:
  • ¼ cup cacao nibs (or more chocolate chips)

Directions:

  1. Mix Dry Ingredients: In a medium mixing bowl, stir together almond flour, vanilla protein powder, Tenzo matcha powder, blue spirulina (if using), and salt.
  2. Combine Wet Ingredients: Add cashew butter, maple syrup, vanilla extract, and peppermint extract to the dry mixture, stirring until well combined
  3. Add Chocolate Chips & Cacao Nibs: Fold in the dark chocolate chips and cacao nibs, making sure they’re evenly distributed throughout the mixture.
  4. Form the Bites: Roll the mixture into bite-sized balls. You should get about 12 energy bites from this recipe.
  5. Chill (Optional):Enjoy the bites right away, or place them in the fridge for about an hour to firm up. This step is optional but makes the bites even more satisfying.
  6. Store: the energy bites in an airtight container in the fridge for up to a week. They’re perfect to grab on the go whenever you need a quick and nutritious snack.
