        Ingredients:

        • 3/4 cup oats (ground)

        • 1 tsp baking powder

        • 1-2 tsp Tenzo Matcha Powder

        • 1 tsp baking soda.

        • 3/4 cup almond milk

        • 1 tbsp apple cider vinegar (ACV)

        • Splash of almond extract

        • Splash of vanilla extract

        • 1 ripe banana

        • 2 eggs or egg whites

        • Fresh figs

        Instructions:

        1. Preheat your oven to 400°F (200°C). This high temperature will help create a crispy top and a perfectly baked texture.
        2. For wet ingredients, mix 3/4 cup almond milk with 1 tablespoon apple cider vinegar to make vegan buttermilk, then add mashed banana, almond extract, and vanilla extract, and blend until smooth in a blender.
        3. For the dry ingredients, mix 3/4 cup ground oats, 1-2 teaspoons matcha, 1 teaspoon baking powder, and 1 teaspoon baking soda.
        4. Add the dry ingredients to the wet ingredients in the blender, blend briefly, then add 2 eggs or egg whites, blend until smooth, and pour the batter into a greased baking dish.
        5. Top with figs and bake at 400°F (200°C) for about 25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
        6. Cool and Serve
