Matcha Chia Pudding

The holidays are here at Tenzo Tea HQ and our team is busy, busy, busy. We’ve been running around like mad people trying to prepare some extra special holiday surprises for our lovely CommuniTea. While I can’t reveal the details, I will say that it’s about to get a whole lot easier to take Tenzo Tea with you as you rush around this holiday season (stay tuned).

All of the extra stress and work from the holiday season means that we need quick easy recipes to help us power through. This brings us to Matcha Chia Pudding. Just like our Matcha Raspberry Smoothie Bowl, this is a healthy and delicious breakfast you can whip up in a snap. I like to make a few servings on a Sunday night just before I go to bed. That way, no matter how bad my case of the Mondays, I wake up knowing I’ve got something yummy waiting for me in the fridge.

Plus it’s a breakfast that’s incredibly healthy for you as well. Matcha green tea is one of the healthiest foods on the planet, and chia definitely ranks high on the list. Together they create an antioxidant-rich, protein-packed breakfast pudding that tastes great and has just a little caffeine to help kick-start the day. 

What are Chia Seeds?

Not just a 90’s era homegrown pet, ch-ch-ch-chia is making a comeback. An ancient Mayan and Aztec super seed, these little babies have been popping up all over the place. I’ve seen them decorating smoothie bowls, added to pizza crusts, topping crackers, inside pancakes, you name it! When you look at their nutritional breakdown, it’s not hard to see why people want to add them to their favorite recipe. Just two tablespoons of these little seeds can give you: 

  • The same amount of Omega 3 fatty acids as a 4 ounce serving of salmon

  • 10 grams of soluble fiber

  • 4 grams of protein

Chia seeds also contain five times more calcium than milk per ounce. Thus they serve as a great alternative source of calcium for anyone who struggles with dairy. Furthermore, they contain antioxidants. Just like our favorite ingredient matcha, chia seeds also have free radical fighting power and can help your body protect and repair damaged cells.

Powerful Protein Meets Clean, Green, Caffeine

While the chia packs this breakfast pudding with lots of long-lasting protein, the matcha green tea powder, of course, is the true star ( are we biased?). Just a small teaspoon will provide you with around 5 hours of focused energy and a heavy dose of antioxidants.

The caffeine experience of matcha is much different from that of coffee. Coffee can leave you jittery and wired, often ending with headaches and crashes. Matcha is different because it contains a special "feel good" amino acid called "L-theanine" that works with caffeine to reduce stress and anxiety while promoting a relaxed state that doesn’t make you feel tired. The result is a gradual boost of calm energy and focus without the crash. Matcha provides the extra punch in this protein packed pudding. It's truly a quick and easy breakfast that will fuel you all morning long. 

 

 Ingredients

  •  1 cup unsweetened almond milk

  •  1/4 cup chia seeds

  • 1 teaspoon Tenzo Tea organic matcha powder 

  • 1 ripe banana 

  • optional: 1 teaspoon maple syrup

Directions

  1.  Combine almond milk, matcha green tea powder, banana, vanilla and sweetener together in a blender and blend until smooth.

  2. Pour the blended almond milk into two jars and divide chia seeds evenly between the two jars. 

  3.  Refrigerate for at least an hour, but for best results leave overnight. The chia should absorb the almond milk and expand to create a thick tapioca-like pudding.

  4. Top with your favorite fresh fruit and enjoy!
